The passion for cooking began early

Anastasia Leonidou grew up surrounded by aromas, flavors, and family recipes that created a deep connection with cooking from an early age. As a child, she spent countless hours beside the kitchen pots, learning that cooking is not simply food, but a way of expression and hospitality.

Through festivals and street food events, Anastasia began presenting her creations to larger audiences. Inspired by traditional recipes and handmade techniques, her dishes quickly became recognized for their authenticity, quality, and distinctive character.

The History of the Liège Waffle

The Liège Waffle ( Gaufre de Liège ), known for its thick, chewy texture and caramelized crust, is one of Belgium’s most famous desserts.

The Royal Legend of the 18th Century

According to local legend, the Liège Waffle was created during the 18th century in the city of Liège, located in the French-speaking region of Wallonia. The story says that the Prince-Bishop of Liège requested his personal chef to create a new luxurious dessert containing plenty of sugar.

The chef experimented with rich brioche-style dough and added large crystals of a then-unusual ingredient: Pearl Sugar . When baked in a waffle iron, the sugar caramelized on the surface, creating a heavenly crispy coating that delighted the ruler.

Liège Waffle

What Makes It Different from Other Waffles?

The Dough:
Unlike standard waffles, Liège Waffles are not made with thin batter. Instead, they use dense, yeast-based dough rich in butter and eggs — similar to brioche.

Pearl Sugar:
The ultimate secret behind Liège Waffles. These compact sugar crystals do not fully melt during preparation. As the waffle bakes, the outer sugar caramelizes, while inner crystals remain intact, creating an incredible crunchy texture with every bite.

The Shape:
Liège Waffles are typically smaller, with irregular oval forms rather than perfect geometric edges.

Because of their rich composition and caramelized sugar, Liège Waffles are naturally sweet. For this reason, in Belgium they are traditionally enjoyed warm, plain, and eaten on the go — as authentic street food — without additional syrups or whipped cream.

The History of Khvorost

Khvorost (Хворост) is a traditional dessert from Russian and Eastern European cuisine, often compared to Greek Diples or Xerotigana . Its name translates to "twigs" or "dry branches" in Russian, inspired by its distinctive crispy texture and shape.

Khvorost has deep roots in Russian culinary tradition and appears in different forms throughout Eastern Europe, including Ukraine, Poland, and Lithuania. It became especially popular in rural communities, where families prepared it for celebrations, religious holidays, and festive gatherings.

Khvorost with Powdered Sugar

The Dough:
Khvorost is made using simple ingredients, primarily flour, eggs, and a small amount of sugar. One traditional secret of the recipe is adding a spoonful of vodka or cognac. The alcohol prevents excessive oil absorption during frying while helping create air bubbles, resulting in an incredibly crispy texture.

The Frying Process:
Khvorost is fried for only a few seconds in hot oil until it reaches a light golden color.

Serving Suggestions:
Once slightly cooled, Khvorost is generously dusted with powdered sugar. Its delicate, airy texture allows it to practically melt in your mouth.

This traditional sweet remains one of the most nostalgic desserts across Eastern Europe, bringing warmth, family memories, and festive spirit with every bite.
